Tasting Notes
Pale lemon in appearance, this Chardonnay opens with honeyed citrus, quince, and a subtle hint of green pineapple on the nose. Lemon thyme and ripe yellow peaches add aromatic complexity. The palate reveals layers of dehydrated lemon rind, golden pear, peach Danish, and a touch of kiwi fruit, delivering a rich yet balanced profile. Plucky acidity enlivens the wine, complemented by a delicate tannic grip that provides structure and intrigue. Bright and textural, this is a Chardonnay of finesse and depth.

A food-friendly Chardonnay that sings with aromatic spices, rich textures and bold flavours. Team it with any of the following:

  • Fish Curry - Grilled snapper, aromatic lemongrass, coriander, lemon, turmeric rice, fried onion & curry leaf
  • Chicken & Spanish Chorizo Paella - grilled chicken, chorizo, roast capsicum, saffron, peas and lemon
  • Fish & chips - locally caught snapper, tartare, lemon, chips and salad
  • Roasted cauliflower - Za'atar, almond, cranberries, parmesan, turmeric tahini

Winemaking
Chardonnay - Whole bunches were hand-picked and pressed directly to big old French oak puncheons where the natural fermentation evolved over a number of weeks. As the yeast settled and the wine brightened, the lees were stirred back into suspension to keep the wine fresh and to build texture. Malolactic fermentation happens naturally during the few months the wine rested in oak and ceramic eggs until the acidity of the wine is in a delicate balance with the fruit.
