Tasting Notes
Lifted aromas of honeysuckle, citrus blossom and ripe stone fruit set the tone, followed by notes of lemon zest and apricot that draw you straight in. The palate is silky and generous, layering flavours of peach, pear and white nectarine with flashes of lemon curd and grapefruit. A gentle savoury edge and subtle oak-derived spice add interest and texture without stealing the spotlight. Fine mineral acidity keeps everything in check, giving lift, shape and momentum through the mid palate. Seamless and quietly indulgent, it finishes dry and persistent with lingering stone fruit and a soft nutty echo - a relaxed yet confident Chardonnay made to share with great company.

A food-friendly Chardonnay that sings with aromatic spices, rich textures and bold flavours. Team it with any of the following:

  • Fish Curry - grilled snapper, aromatic lemongrass, coriander, lemon, turmeric rice, fried onion & curry leaf
  • Chicken & Spanish Chorizo Paella - grilled chicken, chorizo, roast capsicum, saffron, peas and lemon
  • Fish & chips - locally caught snapper, tartare, lemon, chips and salad
  • Roasted cauliflower - za'atar, almond, cranberries, parmesan, turmeric tahini

Winemaking
Chardonnay - Whole bunches were hand-picked and pressed directly to big old French oak puncheons where the natural fermentation evolved over a number of weeks. As the yeast settled and the wine brightened, the lees were stirred back into suspension to keep the wine fresh and to build texture. Malolactic fermentation happens naturally during the few months the wine rested in oak and ceramic eggs until the acidity of the wine is in a delicate balance with the fruit.
