Winemaking
Grenache
- combinations of whole bunches, whole berry and concrete contacted batches done in open fermenters with most left-on skins for extended maceration before a soft pressing to large old oak for settling and maturation.
Shiraz - fermentation in small open fermenters with run off into stainless to complete the fermentation keeping the fruit bright and pure.
Pinot Noir - whole bunches and berry fermentation in small open fermenters and ceramic eggs with then 6 months in big old oak, and a touch of new oak.

Tasting Notes
In the glass, this wine presents a deep violet hue. Aromas of red and black plums intertwine with black cherry, while confectionery notes of red liquorice and cherry jube add a playful touch. Layers of baked strawberry and rhubarb emerge, accompanied by a subtle hint of sweet earth and beetroot that lends a savoury perfume. Bright notes of tart red berries complete the aromatic profile. On the palate, flavours of blueberry skin and preserved black and purple plums take centre stage. These are joined by raspberry compote and ripe cranberries, delivering a lively, fruit-driven acidity. A fine dusting of grippy, chalky tannins adds texture and balance, extending the finish with elegance and precision.
