Winemaking
Grenache
- combinations of whole bunches, whole berry and concrete contacted batches done in open fermenters with most left-on skins for extended maceration before a soft pressing to large old oak for settling and maturation.
Syrah - fermentation in small open fermenters with run off into stainless to complete the fermentation keeping the fruit bright and pure.
Pinot Noir - whole bunches and berry fermentation in small open fermenters and ceramic eggs with then 6 months in big old oak, and a touch of new oak.

Tasting Notes
Juicy and delightfully dark-fruited, this blend of three classic red varieties is a masterclass in effortless harmony and supreme balance. Dark cherry, damson plum, freeze-dried raspberry, cracked black pepper, vanilla pod, and Sicilian green olive intertwine on the nose, leading to an intricate but integrated bouquet. Grenache-lead, this powerhouse varietal lends the wine a dusting of strawberry, raspberry, and cinnamon spice as well as a defining grip from its chalky tannin profile. Syrah provides a cavalcade of blackberry, boysenberry, cocoa powder, and savoury spice as well as significantly deepening the hue of the wine in the glass. Pinot Noir fills in with lush red berries, a burst of vibrancy and unmistakable mid-palate opulence. An ideal choice for easy, outdoor enjoyment, with the option to chill slightly for an extra refreshing experience.
