Winemaking
Grenache & Pinot Noir - fruit from dry-grown old vines are handpicked and then whole bunch pressed to stainless steel where the juice is given extended contact with solids for 10 days prior to ferment to build texture. Juice is then racked to big old French oak puncheons to undergo cool and slow ferment.
Pinot Gris - harvested in the cool of night and then crushed to ceramic egg, where the wine stayed in contact with skins for 2 weeks extracting pink blush colour and vibrant rose water aromatics.
Tasting Notes
White strawberry, Braeburn apple, green plum, sweet spice and sea spray combine to form an immediately alluring and indulgent bouquet with hints of confectionary rising to the forefront in the form of marshmallow, fairy floss and red snakes. Grenache brings flavours of ripe Rainier cherry and raspberry lemonade to the blend, as well as a smattering of allspice, rosehip and hibiscus. Pinot Noir adds lifted red fruit aromas as well as elegant texture and bright acidity, while Pinot Gris swoops in with a zesty twist of lemon peel, pear drop, and white blossoms. The palate is a silken affair, led by a mandarin-like acidity that trickles down the sides of the tongue, concluding in a dry, refreshing finish with glimmers of red apple skin, orange peel and pomegranate.
