Winemaking
Chardonnay - Whole bunches were hand-picked and pressed directly to big old French oak puncheons where the natural fermentation evolved over a number of weeks. As the yeast settled and the wine brightened, the lees were stirred back into suspension to keep the wine fresh and to build texture. Malolactic fermentation happens naturally during the few months the wine rested in oak and ceramic eggs until the acidity of the wine is in a delicate balance with the fruit.
Tasting Notes
Ripe stone fruit, white grapefruit, lemon curd, and meringue take centre stage with delicate hints of honeysuckle, citrus blossom, and gardenia adding complexity as the wine opens. On the palate pear essence, nutmeal, and nectarine meld with zesty pomelo, flinty oak, and a touch of salinity. Delightfully moreish, these bold flavours combine with a svelte, slick texture, gliding along in an irresistibly silky and seamless fashion. Rich flavours of plush stone fruit gather toward the back of the palate as fine mineral acidity and oak tension add structure and length. Culminating in an enticing amalgam of apricot Danish, hazelnut and baking spice, all the best parts of this wine linger on the palate long after its dry, crisp finish.
