Grenache - whole bunch pressed to big old French oak puncheons.
Chardonnay - whole bunch pressed and infused with tea bags of Pinot Noir grapes, to ferment naturally at cellar temperature and extract just the right blush of colour.
Pinot Noir - soft pressing to extract only the palest of juice then fermented at a cool cellar temperature in stainless steel. Kept off yeast lees with gentle stirring for a few months to build a creamy texture.Tasting Notes
What each grape brings to the blend - Grenache gives a distinct candied cherry fruit note and a suppleness to the palate. Chardonnay for a citrus freshness, body and a blank canvas to paint upon. Pinot Noir for the soft pinkish colour, berry fruit aromas and flavours and richness of texture.
Aromas of wild berries picked from the hedgerow with a tartness of acidity and a freshness of flavour. The palate has a plushness reminiscent of red berries and cream, seasoned with a twist of orange skin and a dash of spice. A savoury and mineral tonic note adds a crispness and dryness to finish.
