Grenache - combinations of whole bunches, whole berry and concrete contacted batches done in open fermenters with most left on skins for extended maceration before a soft pressing to large old oak for settling and maturation.
Pinot Noir - whole bunches and berry fermentation in small open fermenters and ceramic eggs with then 6 months in big old oak, and a touch of new oak.
Syrah - fermentation in small open fermenters with run off into stainless to complete the fermentation keeping the fruit bright and pure.
Lifted notes of milk chocolate and coffee are complemented by an array of plush and plummy flavours. Dark forest floor fruits leap from the glass with notes of strawberry, raspberry, blueberry and blackberry swirling from its captivating core. As the wine opens the fruit flavours mellows to reveal veiled notes of sweet earth, mountain herbs, and rose petal adding intrigue, depth, and complexity. The palate is approachable and inviting with its easy tannin and juicy fruit profile leading to a finish complete with lingering notes of Campari.
